Food solutions provider Corbion has created a new way to prevent mould in meat snacks. 

The Verdad Opti Powder XM10 has been developed by Corbion to offer manufacturers an “effective, clean-label way” to inhibit mould in higher-moisture meat snacks.

Corbion claims this is the meat industry’s first clean-label antimicrobial and that it rivals potassium sorbate for mould inhibition, even in applications most vulnerable to mould.

This has been developed as consumer demand for meat snacks continues to grow – in the UK alone, the meat snacks category grew 11.8% year-on-year – and with producers introducing an increasing array of varieties and formats, including softer, high-moisture products.

It is these high-moisture meat snacks and pet treats that are more susceptible to mould. However, the traditional solution for dealing with that challenge – potassium sorbate – is turning off a growing number of label-conscious consumers.

“The ability of Verdad Opti Powder XM10 to provide outstanding control of pathogens and spoilage organisms is a critical competitive asset for processors,”​ said Tom Rourke, PhD, director of business development at Corbion. “But in applications where mould control is a particular challenge, that’s where it really stands out as something uniquely powerful. Being able to tackle the mould spoilage challenge without alienating consumers looking for a clean ingredient label just hasn’t been possible before now. We believe this product can really impact sales for our customers.”
