Tyson Foods has launched protein crisps using upcycled chicken trim under its first brand ¡Yappah! in a bid to fight food waste.

Designed to inspire consumers to address global challenges such as food waste, the protein crisps are crafted from rescued and upcycled vegetables, as well as grain-based ingredients that might otherwise be left unused. The brand made its debut with international crowdfunding platform Indiegogo yesterday (31 May).

Tyson Foods provides upcycled chicken breast trim and combines either rescued vegetable puree or rescued spent grain from beer brewing to create four crisp flavours.

The four flavours comprises Chicken Carrot and Chicken Celery through veggie puree, while the other two flavours, which have been created using rescued spent grain, are Chicken IPA with White Cheddar and Chicken Shandy Beer.

The beer brewing range was created in collaboration with Canadian brewery business Molson Coors.

We could not have developed the Protein Crisps without the enthusiastic collaboration of partners like Molson Coors,” said head of Tyson Foods’ innovation lab Rizal Hamdallah. “We will continue to seek out other great partners, large and small, who have resources and goals that complement our own.

The ¡Yappah! brand mission is unique, important and far-reaching,” Hamdallah added. “With the protein crisps, we are taking ‘forgotten’ ingredients and crafting them into a delicious protein snack. For the ¡Yappah! brand, sustainability is not an add-on, it’s our DNA. Fighting food waste is just the beginning.”

The name of the brand,¡Yappah!, was inspired by a tradition in the South American Andes called ‘yapa’, which refers to the little something extra a merchant gives to a valued customer so that nothing gets wasted.
